CINNAMON WAFFLES

                                                        Best way to start your day. I just love anything spiced with cinnamon. It gives me sanity and makes me believe i'm in control. These cinnamon waffles garnished with organic honey just give meaning to my mornings. I normally multiply the recipe and just keep the rest of the mixture in the fridge for the next day.  How about you giving them a try? INGREDIENTS 2 cups all purpose flour. 1 tsp baking powder 1 egg 2 glasses of milk 4 tbs of butter/ margarine 1 drop vanilla essence 1 tsp cinnamon 1 cup of sugar METHOD In a pan, mix all the dry ingredients together. Pour milk in a sauce pan. Add in margarine and sugar . At medium stir till well melted.  Bit your egg Slowly by slowly add your liquids to the dry ingredients as you stir . SPICY MEAT BALLS

yummy meat balls perfect with spaghetti. Our generation was raised by real African mothers who didn't entertain picky eaters. We were told scary stories or lied to to get us eating anything. We  had one roll . To eat! This generation is way too different, picky eaters are everywhere and this keeps mamas on their toes. The little picky eaters will smash this and ask for more if served with spaghetti.  INGREDIENTS:- 250 g Beef mince 3 cups Bread crumbs  1 egg  1/2 tsp Salt  1/2 tsp Pepper 1 piece grated garlic   1 Grated onion 1/2 tsp Black pepper   Parsley    METHOD : - Mix all together to form something like a dough. Roll the mince into balls Fry till golden brown make sure they don’t break as you fry. SAUCE INGREDIENTS   Tomatoes Onions  Tomato paste  Ketchup   Royco Salt METHOD:-  Fry then to make a thick paste . .  Add your meat balls. BANANA CAKE

Sipping on my tea with a well moist banana cake as i watch the sunset. A week back we got a fresh bunch of bananas from our garden. As we kept them away to ripen , i thought of making a banana cake with the bananas that got too ripe before they were consumed. These are trying times which call for creativity in the kitchen to avoid food wasting. RECIPE 500g flour 250 margarine 180g brown sugar 5 eggs 25g baking powder 5 very ripe bananas 1 grated lemon ring 250 ml water Pinch of mixed spices METHOD Whisk the bananas,sugar and margarine  thoroughly well. Add in eggs slowly by slowly till the mixture looks like spoilt milk. Fold in the rest of the ingredients and mix it well.
