HOME MADE ICE CREAM

vanilla ice cream with grated chocolate The other day some friends came over and i served them  ice cream after their meal. As they indulged, I told them it was homemade. They could not believe it. We randomly talked of how rare it was for one to just walk out of home with an aim of buying a scoop or two yet one could gladly buy if they saw it across the street. This is so true , i can count the times i treat myself to ice cream in a year besides it's never planned.   Served with waffles garnished with chocolate syrup and honey. We'll should make a tin for our homes since its something we rarely plan to eat. A scoop or two in a week while catching up on your favorite series is okay.  It's home made with only four ingredients. BACON BURGER

juicy burger Do you  know those ideas that just popup in our minds but we keep pushing them away? This burger was one of them. I kept procrastinating till i decide to get it out of the way. Two bites in and i wondered what took me so long.  heavenly bite INGREDIENTS:- Burger buns Avocado slices Fresh tomato slices Bacon Eggs Cheese Butter Salt Diced onions Diced tomatoes Vegetable oil METHOD:- Use a tea spoon of  vegetable oil to fry your bacon.  When its ready, palace a serviette on a plate  and put your bacon on to drain. Making the poached egg. Get a pan an smear it with oil 1 tsp. ( make sure its all well coated. Beat your egg directly on the coated pan. Try to make sure the your stays whole. Pour your diced onions and tomatoes ( the onions should not have any liquid. better you use the peeled tomato flesh)  Put them directly on to the egg and sprinkle some salt. BBQ CHICKEN

finger licking good. Imagine a beautiful Saturday evening at your home with friends filled with lots of laughter and food. This BBQ chicken fits in well. It will leave everyone asking more. It's spicy , garnished with honey and BBQ sauce. This is one of our favorites at home. I remember making it for my husband on Valentines day . I served it with Massaba Irish ( his favorite) . I wonder what you will serve it with!! INGREDIENTS Family chicken pack Rosemary ( i used fresh) Dried Thyme Aromat Soy sauce ( light) Royco Honey Heinz tomato sauce Ginger powder Garlic Onions BBQ sauce Vegetable oil Cling film METHOD Put  your chicken a clean dish. In other container, mix all your dry spices. ( rosemary, dried thyme, aromat, royco and Ginger powder Add your dry ingredients to the chicken and mix to make sure all pieces are well coated.  Cover with cling film and marinate over night or for 2 hrs. the smell of anything baking is always heavenly. Breakfast is the first meal of the day waking up with an idea of what to serve puts my mind at peace. Bread is a great idea since it has me sorted for a day or two. These fresh buns might be something in your household. INGREDIENTS 600 g flour 1 tbs yeast 55 g sugar 125 ml warm water 1/2 tsp salt or just a pinch 250 ml milk 2 eggs 50 g melted butter METHOD Add some of your sugar to the yeast with a little lukewarm water &mix till well dissolved. leave to rest for 5 minutes. it will prove. In your flour, add sugar,salt,milk,eggs, melted butter & the yeast.  Knead till soft (the dough should be able to pull to one side) leave  to rest (rise) for 1hr & 30 mints  Remove from the pan & knead it again add some flour to avoid it from sticking.  Cut the dough to desired size.  Roll into small balls & put on a greased pan.  Egg wash & leave to rest (rise) for 45 mins . CINNAMON WAFFLES

                                                        Best way to start your day. I just love anything spiced with cinnamon. It gives me sanity and makes me believe i'm in control. These cinnamon waffles garnished with organic honey just give meaning to my mornings. I normally multiply the recipe and just keep the rest of the mixture in the fridge for the next day.  How about you giving them a try? INGREDIENTS 2 cups all purpose flour. 1 tsp baking powder 1 egg 2 glasses of milk 4 tbs of butter/ margarine 1 drop vanilla essence 1 tsp cinnamon 1 cup of sugar METHOD In a pan, mix all the dry ingredients together. Pour milk in a sauce pan. Add in margarine and sugar . At medium stir till well melted.  Bit your egg Slowly by slowly add your liquids to the dry ingredients as you stir . SPICY MEAT BALLS

yummy meat balls perfect with spaghetti. Our generation was raised by real African mothers who didn't entertain picky eaters. We were told scary stories or lied to to get us eating anything. We  had one roll . To eat! This generation is way too different, picky eaters are everywhere and this keeps mamas on their toes. The little picky eaters will smash this and ask for more if served with spaghetti.  INGREDIENTS:- 250 g Beef mince 3 cups Bread crumbs  1 egg  1/2 tsp Salt  1/2 tsp Pepper 1 piece grated garlic   1 Grated onion 1/2 tsp Black pepper   Parsley    METHOD : - Mix all together to form something like a dough. Roll the mince into balls Fry till golden brown make sure they don’t break as you fry. SAUCE INGREDIENTS   Tomatoes Onions  Tomato paste  Ketchup   Royco Salt METHOD:-  Fry then to make a thick paste . .  Add your meat balls. BANANA CAKE

Sipping on my tea with a well moist banana cake as i watch the sunset. A week back we got a fresh bunch of bananas from our garden. As we kept them away to ripen , i thought of making a banana cake with the bananas that got too ripe before they were consumed. These are trying times which call for creativity in the kitchen to avoid food wasting. RECIPE 500g flour 250 margarine 180g brown sugar 5 eggs 25g baking powder 5 very ripe bananas 1 grated lemon ring 250 ml water Pinch of mixed spices METHOD Whisk the bananas,sugar and margarine  thoroughly well. Add in eggs slowly by slowly till the mixture looks like spoilt milk. Fold in the rest of the ingredients and mix it well.
